Estrellita Doolin

Estrellita Doolin serves as the Chief Executive Officer at Meals on Wheels Waco since April 2025 and holds the position of Vice Chair on the Board of Directors for Foundation Communities, a nonprofit providing affordable housing and support services. Doolin has been a member of the Board of Directors at Central Texas Food Bank from January 2023 to August 2025, contributing to the mission of hunger relief in Central Texas. Prior legal experience includes over a decade at Ascension as an Attorney, and significant roles at Electric Reliability Council of Texas, Inc. (ERCOT), Accor North America, and Golfsmith. Doolin is a graduate of The University of Texas School of Law with a JD, Texas McCombs School of Business with an MBA in Management, and the University of Oklahoma with a BA in Journalism.
