Eric Knight has a diverse and extensive work experience in the restaurant industry. Eric first started as an Assistant Manager at Red Robin in 1996, where they developed leadership skills and successfully managed various departments. Eric later became the Senior General Manager, responsible for growing sales and profit, developing team members, and training managers. In 2012, they joined Einstein Noah Restaurant Group as a General Manager, overseeing day-to-day operations and business growth. Currently, Eric holds the position of Vice President of Operations - Franchise at HuHot Mongolian Grill, where they utilize their expertise in operations and leadership to drive franchise success.
Eric Knight studied Technical Journalism at Colorado State University from 1990 to 1994.
