Lucy later worked as the Group Marketing Director at SSP Group Plc. from 2013 to 2019, where they focused on brand and concept innovation, menu strategy, and franchise partnerships. In 2019, they founded their own company, Whiskey Armstrong, where they served as the Managing Director and Founder. In 2022, Knowles joined Holroyd Howe as the Managing Director, and in 2023, they became the Managing Director of the Cosy Club at Loungers plc.

Established in 2002, Loungers is an award-winning, all-day neighbourhood café-bar and dining business.
