Lucy Knowles has a diverse work experience spanning various industries. Lucy began their career as the Managing Director of Wine Bars at Corney and Barrow LTD from 2005 to 2012. Lucy later worked as the Group Marketing Director at SSP Group Plc. from 2013 to 2019, where they focused on brand and concept innovation, menu strategy, and franchise partnerships. In 2019, they founded their own company, Whiskey Armstrong, where they served as the Managing Director and Founder. In 2022, Knowles joined Holroyd Howe as the Managing Director, and in 2023, they became the Managing Director of the Cosy Club at Loungers plc.

Loungers is led by CEO Nick Collins, and backed by Lion Capital Private Equity, and, as of August 2023, has over 230 sites. The Loungers business comprises three distinct but complementary brands: Lounge café-bar, Cosy Club bar and dining concept, and Brightside roadside dining. In the 52-week period ending 16 April 2023, Loungers' reported 2022/23 revenue of £283.5 million and adjusted EBITDA of £47.3 million. The group also opened 29 new sites in this period. Established in 2002, Loungers is an award-winning, all-day neighbourhood café-bar and dining business. Co-founded by three friends – Alex Reilley (Chairman), Jake Bishop (Commercial Director) and David Reid, wanting to create a neighbourhood café-bar they would want to go to, it has grown rapidly since its inception.
