- From January 1997 to May 1998, they served as an Executive Chef at The Park.
- From April 1992 to January 1997, they worked as a Chef de Cuisine at Lespinasse at the St. Regis Hotel.

Fabrizzio Salerni began their education in 1980 at Institut St. Joseph, where they studied at the Restaurant School and obtained a High School diploma. Fabrizzio then pursued further education in the field of Hotel Management. From 1986 to 1987, they attended Institut Notre-Dame de Loverval - Secondaire and focused on Hotel Management. In 1987, they moved to Ceria and continued their studies in Hotel Management until 1988.
