Oyindamola (Oyin) Akinpelu is a Sensory Scientist Panel Leader at The National Food Lab, specializing in innovation for the food and beverage industry since March 2023. Prior experience includes serving as a Graduate Assistant at Texas Woman's University, where responsibilities included research and teaching senior undergraduate Food Science labs. Oyin also gained practical experience as a Food Safety & Quality Assurance Intern at LSG Sky Chefs and as a Pastry Cook at the Michelin-starred restaurant Le Coucou in New York. Additional culinary experience includes an internship at Dominique Ansel Bakery, contributing to the production of the renowned Cronut. Oyin holds a Master of Science in Food Science and Flavor Chemistry from Texas Woman's University and a Bachelor of Science in Geology from the University of Ibadan.
