Previously, Niki held positions as Associate Director of Product Development and Manager of R&D, emphasizing products for chain accounts and K-12 schools. Niki's early career includes a role as Research Assistant/Graduate Assistant at the University of Arkansas and an internship with the National Chicken Council. Niki holds a Bachelor of Science and Master of Science in Poultry Science and Dietetics from the University of Arkansas and completed a Dietetic Internship at Tulane University in 2005.
