Guillerme Lemos de Matos is an experienced culinary professional with extensive expertise in various roles within the food industry. Currently serving as Cozinheiro de linha at Gramercy Tavern since April 2021, Guillerme also owns and operates the food truck Locomotiva Defumados, specializing in smoked dishes, since February 2016. Additionally, Guillerme has provided personal chef services since September 2014, offering intimate dining experiences in clients' homes. Previous experience includes positions as Chef de cozinha at Breja Cervejaria, where Guillerme developed kitchen operations, and as Chef de Cozinha at Le Zenith Hotel, where Guillerme revamped the restaurant's menu and concept. Early career roles included Management Trainee at Sofitel Dubai Jumeirah Beach and Sous Chef at Restaurante Antonietta. Guillerme holds a Master's degree in Food and Beverage Management from Universidade Anhembi Morumbi, as well as postgraduate and bachelor's degrees in Hotel Management and Gastronomy, respectively.
